Simple Stir Fry.

Stir Fry's are great for many reasons: 1. They're easy. 2. You can use whatever you have in the fridge. 3. You can make enough for leftovers. 4. Quick to prepare 5. It's fun using chopsticks!

Simple Stir Fry:
*2 cups brown rice, soaked overnight
*1 small sweet onion, sliced
*3 garlic cloves
*2 celery stalks, chopped
*1/4 cabbage head, chopped
*1 carrot, chopped
*small broccoli crown, chopped
*2 Tbsp high quality tamari
*1 Tbsp grated/zested ginger root
*2 tsp sesame oil
*1 Tbsp sesame seeds
*2 Tbsp olive oil
*1 egg, beaten...optional

Cook brown rice and set aside. Place skillet or wok over medium heat. Add 1 Tbsp olive oil. Saute onion and celery. Add carrot and 2 cloves of the garlic, minced. Add cabbage. Splash with 1 Tbsp tamari or soy sauce. Add broccoli. Cook all veggies until just tender, but still a bit crunchy. Remove from heat and place in a large mixing bowl. Return skillet to burner. Add 1 Tbsp olive oil. Add most of the rice to the skillet, (you can reserve a cup or so for breakfast cereal or rice pudding). Drizzle rice with 1 Tbsp tamari. Stir. Make a well in the center of the pan, and add the beaten egg. Stir in circles cooking quickly while blending into the rice. Remove from heat and add to the bowl. Drizzle with sesame oil and sesame seeds. Press the remaining garlic clove with garlic press and add to bowl. Grate in ginger as well. Blend thoroughly. Plate and serve with chopsticks.
