Sweet Potato Oven Fries...


What more is there to say.....

Sweet Potato Oven Fries:
*3 large sweet potatoes
*1-2 Tbsp olive oil
*2 cloves garlic, minced..optional
*sea salt
*pepper
*1 Tbsp chopped parsley

Preheat oven to 375. Cut sweet potatoes lengthwise in half. Working with one potato half at a time, cut lengthwise into 1/2 inch sticks. Line a baking sheet with parchment paper. Drizzle a bit of olive oil over parchment and place sweet potatoes on top. Drizzle potatoes with a bit more olive oil, sprinkle with sea salt and pepper (and minced garlic if you choose to make these garlicky) and gently toss with your hands.
Spread the potatoes evenly over baking sheet and bake until tender and golden, about 25 minutes. Remove from oven and allow to slightly cool. Sprinkle with parsley and eat!

It's safe to say, these beautiful roots are true gems, delighting the taste buds and nourishing the body in a substantial way!

  1. i love baking fries! you use MUCH less fat than deep frying, and they're still so delicious!
